Company Coconut Cake

In our house this recipe has become a tradition for Holidays and Birthdays. If you love Coconut Cake you're going to love this one. It's simple and delicious. I found it in a book that was given to me several years ago. When I found out that my father liked it along with my daughter-in-law I made it the first time for Christmas and it has made it to our table every year at least once. The recipe, again is not my own but you can find many different ones on the net, not all of them are the same. The following is the recipe for this lovely, simple cake. You can also serve it with fresh fruit salad. Enjoy.

Yield

one 3-layer cake

Ingredients

  • 3 large eggs

  • 1 (8-ounce) carton sour cream

  • 3/4 cup vegetable oil

  • 3/4 cup cream of coconut

  • 1/2 teaspoon vanilla extract

  • 1 (18.25-ounce) package white cake mix with pudding

  • Coconut-Cream Cheese Frosting

How to Make It

Step 1

Grease and flour three 8-inch round cakepans. Set pans aside.

Step 2

Beat eggs at high speed of an electric mixer 2 minutes. Add sour cream and next 3 ingredients, beating well after each addition. Add cake

mix; beat at low speed until blended. Beat at high speed 2 minutes. Pour batter into prepared pans.

Step 3

Bake at 325° for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans; cool completely on wire racks. Spread Coconut-Cream Cheese Frosting between layers and on top and sides of cake. Store in refrigerator in an airtight container.

Ingredients

  • 1 (8-ounce) package cream cheese, softened

  • 1/2 cup butter or margarine, softened

  • 1 teaspoon vanilla extract

  • 1 (16-ounce) package powdered sugar, sifted

  • 1 (7-ounce) can flaked coconut

How to Make It

Beat cream cheese and butter at medium speed of an electric mixer until creamy. Add vanilla, beating well. Gradually add sugar, beating until smooth. Stir in coconut.
